The Estate

On our estate, we have chosen to plant 7 varieties of olive trees – out of more than 1000 existing in the world – in order to promote cross-pollination and offer a beautiful diversity of flavors.

Here you will find the Picholine, Aglandau, Négrette, Bouteillan, Cul Blanc, Malaricoise, and Cailletier grape varieties . The most prevalent is the Picholine, emblematic of the Uzès region, which allows us to claim the local Protected Designation of Origin (PDO). This variety, which is not very self-fertile, requires the presence of Aglandau vines to fully fruit.

The olive tree is both robust and delicate, requiring special attention to protect it from diseases and pests, particularly the olive fly. To protect our fruit, we apply a thin layer of white clay to the olives, which acts as a natural barrier against these pests.
Analyses are systematically carried out to guarantee that the oil is free of any residue.

To ensure their vitality , our trees are pruned approximately every three years. The natural cycle of the olive tree also alternates between years of high and low production.


Every autumn, we pick the olives directly from the tree. The fruit is harvested at the perfect time, when it changes from green to brown and then to black.

This respectful method allows us to produce single-varietal oils with a unique and fruity taste.

This gives us a pure oil , comparable to freshly pressed fruit juice.

The oil is then stored away from light and bottled on demand for optimal freshness. We favor elegant, recyclable glass and stainless steel containers, perfect for preserving all the richness of the oil.
